I’m a little embarrassed to say, but I have actually never cooked with Kale before. I’ve always wanted to (and Jacob must have secretly known that since he bought it at the store) but just haven’t gotten around to experimenting with meals like I used to. You know, like at the start of marriage where you’re going to be the ‘perfect’ wife and cook and clean all the time? At least, that’s what I thought…wah, wah, wahhhh

Anyways, we ended up needing to cook this kale and I knew I wanted soup of some sort, so Jacob landed on this recipe and totally knocked it out of the park. I had to share!

Ingredients:

6 large potatoes, peeled and cubed

1/4 cup butter

10 cups water

1 teaspoon salt

1 teaspoon ground black pepper

2 1/2 pounds kale – rinsed, dried and chopped (we just used one whole thing of it)

2/3 pound kielbasa sausage, sliced into 1/2 inch pieces

Directions

Place the potatoes into a large stockpot, over medium high heat. Add butter and water, and bring to a boil. Cook potatoes until tender, about 20 minutes. Mash the potatoes inside the cooking liquid. (You could reserve the liquid, and then mash the potatoes in the pan, but it’s not necessary)

Stir in salt and pepper. Simmer for 20 minutes.

Stir in fresh kale and sausage and simmer for another 30 minutes. Serve hot.

This is a meal in itself, but feel free to have a salad, bread or sausage rolls on the side! Give it a try and let me know what you think!
